The gingerbread cake is perfectly moist and filled with so much flavor thanks to brown sugar, molasses, and lots of warm spices. We’re using oil to keep the cake soft. Then the molasses also makes the cake deliciously dense & moist
Then a layer of creamy, tangy cream cheese frosting is slathered on top. Because when in doubt, cream cheese frosting is always the answer. I love how it compliments the spices of the cake and isn’t too sweet.
Then to make it extra festive, I decorated each slice with a few fresh cranberries and mint leaves. I loved the little pop of red and green – but it’s totally optional.
