Peanut Butter Banana Chocolate Chip Cookies

Peanut Butter Banana Chocolate Chip Cookies are extra soft, a little gooey & packed with flavor. If you like your chocolate chip cookies a little cakey - or if you love the combination of peanut butter and banana - then these are for you!

Ingredients

  • ½ cup unsalted butter , softened to room temp
  • ½ cup peanut butter
  • 1 cup brown sugar , packed
  • 1 large egg
  • 1 ½ teaspoon vanilla extract
  • ½ cup mashed banana , about 1 medium-sized banana
  • 2 cups all-purpose flour
  • ¾ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 ¼ cup chocolate chips

Instructions

  • Beat together the butter, sugar & peanut butter in a large bowl using an electric mixer. Once combined beat in the egg, vanilla and mashed banana.
  • Turn the mixer down to low speed and carefully mix in the flour, baking soda and salt. 
  • Then turn off the mixer and stir in 1 cup of the chocolate chips. The batter will be very soft and sticky. 
  • Cover the bowl withe clingfilm and refrigerate for at least 2 hours. 
  • When ready to bake, preheat the oven to 350F degrees and line 2 cookie sheets with parchment paper or silicone baking mats. 
  • Form the dough into balls about 1.5-2 tablespoons in size. Place 2 inches apart on the prepared cookie sheets, flatten the balls slightly and place the remaining ¼ cup chocolate chips on the top of each cookie. 
  • Bake for 7-9 minutes or until the tops look just set. Allow to cool on the tray for 10 minutes before transferring to a wire rack
