Peanut Butter Banana Chocolate Chip Cookies are extra soft, a little gooey & packed with flavor. If you like your chocolate chip cookies a little cakey - or if you love the combination of peanut butter and banana - then these are for you!
Beat together the butter, sugar & peanut butter in a large bowl using an electric mixer. Once combined beat in the egg, vanilla and mashed banana.
Turn the mixer down to low speed and carefully mix in the flour, baking soda and salt.
Then turn off the mixer and stir in 1 cup of the chocolate chips. The batter will be very soft and sticky.
Cover the bowl withe clingfilm and refrigerate for at least 2 hours.
When ready to bake, preheat the oven to 350F degrees and line 2 cookie sheets with parchment paper or silicone baking mats.
Form the dough into balls about 1.5-2 tablespoons in size. Place 2 inches apart on the prepared cookie sheets, flatten the balls slightly and place the remaining ¼ cup chocolate chips on the top of each cookie.
Bake for 7-9 minutes or until the tops look just set. Allow to cool on the tray for 10 minutes before transferring to a wire rack
