Ingredients

  • 2 1/4 cups all purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 4 oz cream cheese , softened
  • 1/4 cup granulated sugar
  • 2 tablespoons butter , melted
  • 2 teaspoons vanilla extract
  • 2 large eggs
  • 1 cup milk

Instructions

  1. In a large bowl whisk together the flour, baking powder, baking soda, and salt.

  2. In a separate large bowl, whisk the cream cheese and sugar until smooth.

  3. Then whisk in the vanilla extract and eggs, followed by the milk into the cream cheese mixture.

  4. Gently fold the wet ingredients into the flour mixture.

  5. Heat a large frying pan or electric griddle to low-medium heat. Lightly grease with oil or non-stick cooking spray.

  6. Pour 1/4 cup of batter per pancake onto the griddle and cook for 2-4 minutes until you see a few air bubbles beginning to form. Flip, and continue cooking on the other side until golden.
