Banana Chocolate Chip Pancakes

These banana chocolate chip pancakes are the perfect start to your day. They're extra fluffy, super thick, filled with chocolate chips and taste like banana bread in pancake form.

Ingredients

  • 2 medium bananas , brown
  • 2 tablespoons granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 tablespoon melted butter
  • cup milk , room temperature perferred
  • 1 cup all-purpose flour
  • 1 ½ teaspoon baking powder
  • ¼ teaspoon salt
  • ½ cup chocolate chips
  • oil or nonstick cooking spray

Instructions

  • Preheat a griddle to 350F or a large frying pan over low-medium heat.
  • In a large bowl mash the bananas.
  • Whisk in the sugar, egg, vanilla extract and melted butter.
  • Stir in the milk
  • Gently fold in the flour, baking powder and salt using a rubber spatula or wooden spoon.
  • Stir in the chocolate chips
  • Lightly grease the frying pan or griddle. 
  • Pour about ¼ cup of batter onto the griddle/frying pan per pancake. 
  • Cook for 2-3 minutes or until you see a few small air bubbles forming on the uncooked side. Flip and cook on the second side. *

Notes

*I always do 1 pancake first to test the heat of the frying pan/griddle
