Lemon Cake Mix Cookies

Love lemon? Then try these easy lemon cake mix cookies. They're extra soft with a delicious hint of lemon and white chocolate chips.

  • ½ cup unsalted butter , softened
  • 3 oz cream cheese
  • 2 large eggs
  • 1 box lemon cake mix , 515g or 18 oz
  • ¾ cup white chocolate chips


  • Preheat the oven to 350F degrees.
  • In a large bowl beat together the butter and cream cheese. Then beat in the eggs. 
  • Sift the cake mix into the bowl.
  • Carefully beat everything together. 
  • Stir in the chocolate chips. 
  • Drop the dough into tablespoons 2 inches apart on a lined cookie sheet.**
  • Bake for 7-8 minutes or until the tops look set. Optionally, place a few extra chocolate chips on the top of each cookie. 


*I recommend using a cookie scoop because the dough is sticky. If you don't have one and the dough is too sticky to work with, place it in the fridge for 15-30 minutes to help firm up.
