Fruit crisps & crumbles are one of my favorite desserts. And these raspberry crumble bars just might be my new favorite. I sharing the recipe today over on Oh Sweet Basil, along with lots of tips for making these easy bars.
These raspberry crumble bars have a buttery, shortbread like base layer; a layer of juicy raspberries; and are topped with even more crumble. The base layer actually doubles as the crumble topping – so there’s less cleanup & steps required.
Then for the raspberry layer we’re using fresh berries and raspberry preserves mixed together. I found that using all fresh berries caused the base layer to get too watery – so using both gives you a juicy berry layer, but still keeps the shortbread base nice and crunchy.
