Today I’m taking a break from the sugar to share this easy southwest pasta salad over on Oh Sweet Basil. It’s such an easy recipe, and it’s the perfect side dish for barbequed chicken, pork or red meat. And it’s also great for entertaining because it seriously feeds a crowd.
Because the weather has been getting soooo hot outside, it means I’ve been a little hesitant to turn on the oven and bake. So when Carrian over at Oh Sweet Basil and I were talking about new recipes – I jumped on the idea of making this southwest pasta salad. It’s perfect for summer, filled with lots of fresh produce, and I’m so in love with anything with corn and black beans.
What I also really love about this southwest pasta salad is that it uses a chilli lime vinaigrette dressing. It’s so flavorful and tastes fresh and summery. Plus – there’s no mayonnaise. Anyone who knows me knows that I hate mayonnaise. Not only is it bad for you – but I think it’s just plain icky.
