So when Carrian over at Oh Sweet Basil and I were talking about new recipes – I jumped on the idea of making this southwest pasta salad. It’s perfect for summer, filled with lots of fresh produce, and I’m so in love with anything with corn and black beans. Southwest pasta salad is an easy, delicious recipe for all your summer BBQs and potlucks. What I also really love about this southwest pasta salad is that it uses a chilli lime vinaigrette dressing. It’s so flavorful and tastes fresh and summery. Plus – there’s no mayonnaise. Anyone who knows me knows that I hate mayonnaise. Not only is it bad for you – but I think it’s just plain icky.
