Great recipe Fiona! The kids and I made these today and they came out great! Pro tip: my son doesn’t love mint so I left the mint extract out and then crushed fruit flavoured candy canes on one batch for him and used regular mint candy canes on the rest. The shortbread is so light! Whipping the butter first definitely makes a difference. Can’t wait to try another of your Christmas recipes.
