Oh January. The month for new beginnings, new goals and terrible weather. It’s also the time of year when I become sheepishly quiet as everyone discusses their resolutions – because while my friends are being super healthy – all my resolutions include eating carbs:
- Make cheesecake more often
- Perfect light & fluffy cinnamon rolls
- Learn to deep fry yeast doughnuts…..
But today I’m hopping on the healthy eating train because I can’t have treats everyday. And I truly wish I had the discipline to be 100% healthy even for 1 month of the year.
So – remember how I love chocolate, almonds & coconut? Well we’re using these delicious flavors to make a shake that’s a super healthy breakfast or snack. It’s chocolatey, nutty, refreshing, filling & frothy. Plus it’s also dairy free, gluten free, sugar free & even vegan – so it definitely fits with your resolutions.
It also has only 5 ingredients and we’re throwing them (maybe not quite literally) in the blender so it’s ready in sheer minutes. The recipe calls for almond milk, almond butter, cocoa, banana & coconut. Super natural, super tasty. Super superlatives. I used unsweetened vanilla almond milk & sweetened shredded coconut and it was sweet enough for me. You could use sweetened almond milk instead or add a little honey, steevia or agave if you prefer it sweeter. If you’re looking for some extra protein you could sub the cocoa for chocolate protein powder too, or just add a little extra almond butter.
It’s tasty, delicious & healthy. So it’s a great breakfast to keep your resolutions on track – or to make up for the cookies you’ll be devouring at lunch!
Chocolate Almond Coconut Shake
Ingredients
- 1 cup unsweetened almond milk
- 1 tablespoon almond butter
- 1 tablespoon cocoa powder
- 1 ripe medium-sized banana (yellow in color, not green or brown)
- 1-2 tablespoons coconut ,use unsweetened for sugar free option
Instructions
- Place all ingredients in the blender or food processor and blend until smooth.
