Breakfast & Brunch Recipes for Mother’s Day
Why not start the day with a delicious breakfast or brunch and let your Mom sleep in and relax? Here are some of my favorite breakfast and brunch recipes for Mother’s Day – including recipes that can be prepped the night before and baked in the morning.
This delicious French toast casserole is perfect for entertaining or feeding a crowd. You can do all the prep work the night before, then bake in the morning. It’s fluffy and comforting and tastes delicious with whipped cream, maple syrup and berries.
Blueberry French Toast Casserole
Much like the classic French toast casserole listed above – only this version is dotted with blueberries and topped with cinnamon streusel. It takes the classic French toast bake up a notch.
If your Mom loves chocolate – then these double chocolate muffins are the way to go. They’re big, bakery-style muffins that are moist, fudgy and filled with chocolate chips.
If you want something a little more café style – these fluffy ricotta pancakes taste gourmet. They’re extra fluffy with an almost creamy flavor. These are great to pair with homemade blueberry sauce or strawberry sauce.
Desserts and Treats for a Mother’s Day Afternoon Tea or Brunch
If you’re looking for a dessert or something sweet – but not too decadent – these are some of my favorite recipes for spring.
This cake is moist and tender with a delicious citrus flavor and sweet blueberries throughout.
I love coffee cake for brunch or a slice in the afternoon. This recipe features a buttery vanilla cake with a layer of sweet berries, streusel topping and a drizzle of glaze.
If you just a bite-sized dessert – then these mini cupcakes are delicious and look beautiful. Or go for the vanilla version.
Best Mother’s Day Desserts
Cakes, cupcakes, and cheesecakes – many of these desserts are inspired by spring. I’ve also included a few chocolate dessert if that’s your Mom’ s favorite.
Lemon Cheesecake with Blueberry Topping
I think this lemon cheesecake with blueberry topping is the the perfect flavor combo for spring. The cheesecake will need to chill in the fridge for at least 6 hours before serving, so it’s great for making ahead of time. I recommend making the cheesecake the day before you plan to serve it, then chilling in the fridge overnight. Make the blueberry topping the day you plan to serve.
Vanilla Cupcakes with Fresh Strawberry Frosting
The pink frosting on these cupcakes makes them absolutely beautiful. The vanilla cupcakes are moist and fluffy and the strawberry frosting actually tastes like strawberries because it uses real berries for flavor. The frosting does take a few extra steps, but the flavor is definitely worth it.
If your Mom loves chocolate – then this is the recipe for you. Extremely moist and fudgy – this chocolate cake looks impressive and tastes even better. This chocolate cake is definitely for Mom’s who love chocolate!
If your Mom loves chocolate – but you don’t feel like putting in all the work of making a layer cake, then I’d suggest these triple chocolate brownies. They’re thick, fudgy, perfectly rich and delicious with a scoop of ice cream on top.
No matter how you choose to spoil the important people in your life this Mother’s Day – I hope these treats inspire you to bake something delicious. And to all those celebrating today – moms, grandmothers, aunts, mom figures, step-moms, best friends, and support systems – thank you for all that you do.
