I think this lemon cheesecake with blueberry topping is the the perfect flavor combo for spring. The cheesecake will need to chill in the fridge for at least 6 hours before serving, so it’s great for making ahead of time. I recommend making the cheesecake the day before you plan to serve it, then chilling in the fridge overnight. Make the blueberry topping the day you plan to serve.
The pink frosting on these cupcakes makes them absolutely beautiful. The vanilla cupcakes are moist and fluffy and the strawberry frosting actually tastes like strawberries because it uses real berries for flavor. The frosting does take a few extra steps, but the flavor is definitely worth it.
