Today I’m sharing these no bake mini chocolate cheesecakes over on Oh Sweet Basil. They’re completely adorable, perfect for parties, and really easy to make – even though I think they look pretty impressive (if I do say so myself).
The crust is made by mixing together crushed Oreo cookies and melted butter. Then we press it into the bottom and sides of a muffin pan to create a little tart shell shape. I’m sharing all my tips for making these crusts turn out perfectly over on Oh Sweet Basil.
For the chocolate cheesecake filling – it’s made from cream cheese, melted chocolate, powdered sugar, a little sour cream and whipping cream. You’ll want to make sure your cream cheese is well softened prior to getting started to ensure that your cheesecake is smooth and creamy with no lumps.
Then either spoon the cheesecake filling into each well, or pipe it in using a piping bag. Pop them in the fridge (or freezer) to set – and we’re all ready to serve.
I topped mine with a drizzle of melted chocolate and a strawberry slice. But they’re also delicious plain, or with more crushed Oreo crumbs.
