Christmas is the peak time of year for making cookies, homemade candies, and all kinds of delicious treats. But it’s also the busiest time of year for most people. So let’s face it – sometimes you just don’t have enough time to do everything.
And as much as I love baking – spending time with friends and family takes priority.
So whether you need a last minute homemade gift, ran out of baking, or need a quick and easy sweet treat to get you through gift wrapping – here’s my favorite easy last minute Christmas treats.

These are salty, sweet and deliciously addictive. You only need 3 ingredients – pretzels, chocolate and candy canes. These are so great to snack on, and they’re also a delicious homemade gift.

I don’t think a holiday baking tray is complete without fudge. This fudge recipe is creamy & smooth. But best of all – there’s only 3 ingredients and you don’t have to use a candy thermometer. You can either make it in the microwave or on the stovetop.
Whipped Shortbread Cookies
These buttery, shortbread cookies are perfect for Christmas. They melt in your mouth, and the holiday sprinkles make them look extra festive. I always make shortbread over the holidays and this is my all-time favorite recipe. No dough chilling, and super simple ingredients.
Confetti squares are a super delicious retro dessert for people with a serious sweet tooth. They’re filled with peanut butter, butterscotch and mini marshmallows. With only 4 ingredients, it’s a super easy no bake recipe that you can make in under 5 minutes. Then pop the pan in the fridge to chill.

Gingerbread is such a classic holiday flavor. However, making gingerbread men it takes a long time. The dough typically needs to be chilled for over 4 hours, and then rolled out and cut into shapes. These easy gingerbread cookies are way faster and easier to make. There’s no need to chill the dough, no rolling out and using cookie cutters, and instead of using royal icing – they’re topped with fluffy cream cheese frosting.
