Nutella Stuffed Single Serving Chocolate Chip Cookie

This Nutella stuffed chocolate chip cookie is a giant, single serving cookie that’s thick, chewy and oozing with Nutella. It’s the perfect, decadent late night treat!

My Nutella stuffed chocolate chip cookies are one of my all-time favorite cookie recipes. You get a super soft and chewy chocolate chip cookie that oozing with Nutella when you bite into it for complete cookie perfection.
So when the craving hits – but you can’t be bothered to make an entire batch of cookies – this Nutella stuffed single serving chocolate chip cookie is the answer. It’s a gigantic thick and chewy chocolate chip cookie that’s stuffed with a pool of warm Nutella. The cookie is definitely large enough to share – but the choice is yours.

You’ll start by taking a dollop of Nutella onto a lined cookie sheet, then popping it into the freezer. When the Nutella is frozen – or at least slightly firm – it makes it much easier to stuff the cookie dough ball.

Then you’ll make the cookie dough. The recipe is adapted from my single serving chocolate chip cookie recipe. It can be made in a small bowl and everything can be mixed together with a fork. I did increase the amount of flour slightly, so that the cookie is thicker – which makes it better for stuffing with Nutella.
After the dough is made, it’s time to form the gigantic cookie dough ball. You’ll take about 3/4 of the dough and flatten slightly. Then place the frozen (or firm) Nutella dollop in the middle. Place the reaming dough on top of the Nutella dollop, then pinch the dough around the edges so that the Nutella is fully covered and roll into a ball.

The cookie will bake in the preheated oven for about 14-15 minutes, or until the top looks just set. I like to place extra chocolate chips on top of the cookie after it’s done baking.
The combo of chewy, verging on gooey chocolate chip cookie and oozing Nutella make this single serving cookie the ultimate late night treat. It’s definitely rich and big enough to share – but if you’re looking for a decadent cookie for one – then this single serving Nutella stuffed cookie is the perfect thing.

Ingredients
- 1 1/2 tablespoons Nutella
- 2 tablespoons unsalted butter, melted
- 2 tablespoons brown sugar , light or dark is fine
- 1 tablespoon granulated sugar
- 1 large egg yolk, discard the white or save for another recipe
- 1 teaspoon vanilla extract
- 7 tablespoons all-purpose flour
- 1/4 teaspoon baking powder
- pinch salt
- 3 tablespoons chocolate chips
Instructions
- Line a cookie sheet with baking paper. Scoop of the Nutella (about 1 1/2 tablespoons) and dollop on the lined cookie sheet. Place in the freezer.
- Preheat the oven to 350F (180C).
- In a small bowl, whisk together the butter, brown sugar and granulated sugar with a fork. Keep whisking until the butter is no longer separate/sitting on top of the sugar.
- Whisk in the egg yolk and vanilla until evenly combined.
- Add in the flour (be sure that the tablespoons aren't heaping!), baking powder and salt. Stir together until all the flour is incorporated.
- Stir in 2 tablespoons chocolate chips (you'll use the rest for dotting on top of the cookie after its done baking).
- Take about 3/4 of the dough and flatten slightly. Take the frozen (or firm) Nutella dollop and place in the middle of the dough. Place the remaining dough on top of the Nutella dollop. Pinch the edges of the dough around the Nutella so that its entirely covered in dough and roll into a ball.
- Bake in the middle of the preheated oven for about 14-16 minutes or until the top looks set. Remove from the oven and carefully dot the top of the cookie with a few more chocolate chips

- Nutella: Freezing the Nutella first (at least to the point where it’s firm) makes forming the cookie dough ball much easier.
